Lauren is a certified health coach, private chef, and culinary educator with 15+ years of professional kitchen experience. She’s the author of The Accidental Paleo, a collection of paleo-friendly, dairy-, gluten-, and refined-sugar-free vegetarian recipes for everyday life.
A recovering sugar addict and former pastry chef (including head baker on Food Network’s Ace of Cakes under Duff Goldman), she never expected to land on a mostly plant-based, egg-loving, fish-occasional way of eating. That surprise path is the heart of the book: healthy food that still tastes like something you want to cook again.
She later ran a successful healthy meal delivery service in Malibu, then brought the same mix-and-match kitchen mindset to families: roast vegetables until they caramelize, turn an appetizer into a main, keep a flexible pantry, and make leftovers feel new. Originally from Montreal, Lauren now calls Austin, Texas home with her two children.
Her philosophy is simple: food is energy, food is information, and it should taste absolutely delicious. Every plan and tip here is built so that feels doable on a weeknight.
